Job Summary:

The Oyster Box Hotel is seeking an exceptional Restaurant Manager to lead the Ocean Terrace — one of Durban’s most celebrated dining experiences, known for its warm hospitality, impeccable service, and breathtaking sea views. As the Restaurant Manager, you will be responsible for the day‑to‑day leadership and overall success of the Ocean Terrace. You will ensure that every guest enjoys a seamless, memorable, and personalised dining experience that reflects our 5‑star standards.

Minimum Requirements:

· 2-3 years’ experience in the same or similar role in a 5-star establishment

· Ability to effectively listen and verbally communicate in English with all levels of staff and management

· Must be proficient in MS Excel, Word and Outlook

· Certificate or Diploma in Hotel Management would be an advantage

· Ability to make decisions and work independently

· Proven experience in a similar leadership role within a luxury hotel or high‑end restaurant.

· Strong leadership, communication, and interpersonal skills.

· Ability to thrive in a fast‑paced, high‑volume environment.

· Professional, well‑presented, and driven by service excellence.

· Knowledge of restaurant systems, stock control, and financials.

· Availability to work shifts, weekends, and public holidays.

Key Responsibilities:

· To ensure the guests get the highest level of food and beverage service by making contact with the guests and to check customer’s satisfaction.

· Maintain a high standard personal service with all guests.

· To take personal responsibility for any guest situations, seeing the situation through to the solution.

· To ensure that your outlet is following correct billing procedures so that all revenue is correctly allocated and recorded.

· Lead, motivate, and develop the Ocean Terrace service team.

· Maintain the highest levels of guest service and operational excellence.

· Oversee daily restaurant operations, reservations, and guest flow.

· Manage stock control, costing, and budget adherence.

· Ensure compliance with health, safety, and hygiene regulations.

· Foster a positive working environment that supports teamwork and growth.

· Work closely with the culinary team to deliver consistent quality and innovation.

· Handle guest feedback professionally and proactively.
